Vegan Spelt Cookies - By Miss Bliss Whole Foods Kitchen

We absolutely love cooking with spelt flour - it has a light nutty flavour which adds nicely to any baked goods with a light and fluffy finish. It is a whole grain flour which is high in protein and rich in vitamins and minerals. Spelt does contain gluten but it is a little bit different, it can be broken down with kneading, though this may provide a more crumbly finish - be gentle! 
 
What you will need:
1 cup oats
1 cup spelt flour
1 cup dessicated coconut
3/4 cup coconut sugar
3/4 cup coconut oil
3 tablespoons pure maple syrup
1 teaspoon bi carb soda
1 teaspoon vanilla
30ml water
 
Method:
Combine oats, spelt flour, coconut - mix well
In a saucepan heat coconut sugar, coconut oil, maple, vanilla and water - once combined add bi carb (it should fizz up)
Mix together both dry and wet mix until a dough forms
Roll dough into balls and place on lined tray - flatten with a fork or hands
Place in oven at 170 degrees for 15-20 minutes or until golden brown
Once cooled I used Mayvers Organic Peanut Cacao Spread to squish between two cookies for a decadent treat!
