Chickpea Cookies - By Authentic Spoon Nutrition

Chickpea cookies...yep that’s right, you can actually turn a highly nutritious little round thing into a delicious cookie - who knew?!
This super healthy, high fibre, protein, healthy fats and low GI cookie recipe by Tess from Authentic Spoon Nutrition is so easy...
1 can of chickpeas (drained)
2 tablespoons of peanut butter
1 tablespoon of honey or rice malt syrup
1. Add all ingredients together and blend well in a food processor.
2. Add in whatever additional fillings you like (nuts, berries, chocolate)
3. Use a spoon to evenly divide mixture into balls and place on lined tray, 3cm apart. Press down slightly.
4. Then bake for around 15-20mins.
